Barley Halwa / Barley Pudding
Again its Thursday and i am on fast. But i don't want to have regular halwa and i have barley grain which i want to use in innovative way so thought of using it today for my halwa. And guess what with little "mehnat" it came out so well that i am fan of this dish and of myself 😉 that i tried it.
The crunchiness and aroma of the halwa made me drool over it. It is prepared with minimal ingredients available at my home.
In preparing it i used unrefined sugar, you can use jaggery too.
Lets see how to prepare this.
Ingredients -
1. Barley flour or grains - 1 Cup
2. Brown Sugar - Half Cup (As per the sweetness you like)
3. Cardamom powder - 2 Pinch
4. Chopped Dry fruits - 3 Tbs (Almond, cashew, Pista)
5. Ghee / Sunflower oil - 3/4 Cup
6. Water - 2 Cups
Recipe -
1. If you are taking Barley grains, grind it and sieve and now grind the leftover barley grain you get after sieving and continue the process till you get a nicely grounded flour. At the end of sieving, you will get small quantity (1-2 Tbs) of barley granules. Keep it aside, don't throw it. It will give a crunchy texture to Halwa.
2. Take Kadhai and heat it. Once it is sufficient hot, add ghee/oil and heat it for few seconds.
3. Now add Barley flour and sieved barley granules too.
4. Roast them on low - medium flame. Keep it stirring so that it should be roasted evenly. Roast it till it is brown in colour and you get a nice aroma. It will take 10-15 mins.
5. Now add sugar and mix well till the sugar starts melting. It will take 1-2 mins.
6. Its time to add half of the roughly chopped dry fruits and mix well and now add water slowly in batch and keep stirring it so that no lumps should form.
7. Keep stirring the Halwa till the oil starts separating out and sugar is melted and mixed completely.
8. If you have used oil then at the end add 1 Tbs Ghee to give it a nice aroma and taste. With this Halwa is ready to serve.
Transfer Halwa in the serving bowl and garnish it with Remaining chopped dry fruits and serve it.
Note - If you don't have barley grains then you can take flour straight away. There will be no difference in taste.
You can have it as fasting food, morning breakfast, as sweet and also as evening snack. As fasting food you can also eat it with Puri made of Barley/wheat/Refined flour.
