Chenna pais/Rasmalai



Angoori rasmalai is an Indian dessert consumed mainly in India, as well as in Pakistan and BangladeshAngoori derives its name from Angoor which is Hindi for grape, signifying the shape and form, and also alluding to its sweetness. The name ras malai comes from two words in Hindi: ras, meaning "juice", and malai, meaning "cream". The dessert is made from cottage cheese which is then soaked in chashni, a sugary syrup, and rolled in fine sugar to form grape-sized balls.
Ras malai consists of sugary white cream, or yellow-coloured (flattened) balls of chhana soaked in malai (clotted cream) flavoured with cardamom. It is cooked in sugar syrup and milk with saffronpistachios and kheer as stuffing.[3] Homemade ras malai is usually made from powdered milk, all-purpose flour, baking powder and oil, which are kneaded to form a dough, moulded into balls, and dropped into simmering milk cream.
Ras malai or rossomalai has been described as "a rich cheesecake without a crust. The sweet is of Bengali origin; according to K.C. Das Grandsons, it was invented by K.C. Das.

Lets see the recipe now:

Ingredients:
 For Chenna or cottage cheese balls-
Milk 2 litre
White vinegar ½ cup
Sugar 1 cup

For Milk syrup-

Milk - 2Litre
Sugar - 1 cup
pistachios chopped - 2 tbs
Almond - 2tbs
Green Cardmom - 1/2 tbs
Saffron - few strands/pinch

Recipe:

For chenna or cottage cheese balls

  1. Boil milk in thick bottom pan.
  2. Mix Vinegar with ¼ cup water.
  3. As soon as milk starts boiling pour vinegar-water mixture in it.
  4. Boil till chenna gets separated completely.
  5. Put muslin cloth on the strainer and strain chenna. Now put this under running tap water for 5 minutes.
  6. Now fold the muslin cloth and strain the water from chenna completely.
  7. Take this chenna in big bowl and knead it for 30-40 minutes with hand. This will turn into soft dough. Make chenna balls/flat round peda of size as you wish.
  8. Heat pressure cooker and put two glass of water and add sugar in it as soon as it starts boiling and make thin sugar syrup.
  9. Now put all chenna balls and put the cooker cover but without whistle.
  10. Put at medium flame for 15 minutes, now open cooker and take out balls with care as it may get spoiled. Let it cool and put it in refrigerator for some time.
For Milk Syrup -
1. Take a heavy bottom deep pan and put the milk in it and heat it.
2. Stir it consistently to avoid sticking to bottom.
3. Add all ingredients except sugar and stir it.
4. Once it is reduced to half, put it off the flame and add sugar and let is cool.
5. Now add all the cheese balls in it and put it in refrigerator to cool.
6. Once chilled serve it in serving bowl and garnish it with chopped almond and pistachios and enjoy with your loved ones.
