Potatoe Masala Stuffed Mix Vegetable Paratha







What a evening in Bangalore. It rained and the weather is awesome today and i had very few ingredients to enjoy a good dinner so i thought of making parathas with available ingredients.
Potatoes masala stuffed mix vegetable parathas are sumptuous and super easy to make and also one of the yummiest dish to enjoy.

Now lets have a look on the recipe:

Ingredients:

For stuffing:

Boiled and mashed potatoes - 1/2 Cup
Roasted cumin powder - 1 Table spoon
Roasted red chilli powder - 1/2 Table spoon
Chopped coriander leaves - 1 Table spoon
Chopped green chilli - 1/2 Table spoon
Grated ginger - 1/2 Table spoon
Oil - 1 Table spoon
Salt to taste

For Dough:

Whole wheat flour - 2 Cups
Green peas boiled and mashed - 1/4 cup
cabbage boiled and mashed - 1/4 cup
carrot boiled and mashed - 1/4 cup
black jeera - 1/2 Table spoon
Ajwain - 1/2 Table spoon
Oil - 4-5 Table spoon
Roasted cumin powder - 1 Table spoon
Roasted red chilli powder - 1/2 Table spoon
Chat Masala - 1/2 Table spoon
Chopped coriander leaves - 1 Table spoon
Chopped green chilli - 1/2 Table spoon
Salt to taste

Oil for shallow frying

Recipe:
For stuffing:

1. Heat oil in a pan and add ginger and green chill and saute for one minute add mashed potatoes in it and add cumin and red chilli powder and mix well on low flame for two mins and switch off the flame and then add coriander leaves and mix well.

2. Divide the stuffing in eight equal ball and keep it aside.

for Paratha:

1. Mix all the ingredients as mentioned in ingredients section with all masala and knead well. You may need little water for knead the dough. Keep aside for few mins.

2. Now take the dough and divide the dough in eight small ball.

3. Take one ball and roll it in small round shape and now take one ball of stuffing and place in the middle of puri and now slowly enclose the puri from all side. Like wise do for all other seven balls.

4. Roll the stuffed ball into paratha with the thickness you wish.

5. Heat the tawa (non stick on cast iron will work) and place the paratha on it and cook it well on both side and pour some oil and roast the paratha till it turn crispy on both side. You can also shallow fry this.

Now yummy paratha is ready. Serve it with any curry or chutney and enjoy the crisp and yummy parathas. Till then i will be back with a new recipe.

[Variation - you can also make the paratha without any stuffing or with paneer or peas maslas stuffing which i will share later.]
