Hello, I am sharing dessert recipe of spongy Bengali Rasgulla
Soft spongy rasgulla doesn’t need any introduction.
This is smoothen chenna balls boiled in sugar syrup.
It is very soft and spongy sweet sweet recipe. 
Even kids can enjoy with no fuzz.


Ingredients - 
  1. Full cream milk - 2 L
  2. Sugar - 1 Cup
  3. Lemon juice - 1 (or Vinegar - 2 Tbsp)
  4. Water - 1 L

Recipe -
  1. Heat a saucepan
  2. Add 2 L full cream milk
  3. Boil it on medium flame
  4. Take 1 lemon juice or vinegar-water mix (mix of 2 Tbsp water and 2 Tbsp vinegar)
  5. Once it start boiling, add either lemon juice or vinegar-water mix
  6. Keep stirring for proper cuddling of chenna
  7. Strain chenna in muslin/cotton cloth
  8. Wash with cold water to remove lemon/vinegar smell and taste
  9. Remove water fully from chenna with fold and squeeze method
  10. Transfer chenna in big plate
  11. Smooth the chenna with back of the palm for 25-30 mins to avoid crack in chenna balls
  12. Once done knead in dough shape
  13. Take a spoonful of smooth chenna and roll in balls with no crack
  14. Heat a cooker in medium flame
  15. Add 1 L water and 1 cup sugar and boil till sugar melts
  16. Drop chenna balls gently
  17. Remove whistle from lid and put it
  18. Boil for 6-7 mins and switch off the flame and cool it
  19. Open the lid and transfer rasgulla gently in serving bowl
  20. Can freeze it for some time and serve chilled or hot as you wish
  21. Spongy rasgulla its ready to enjoy

Lets see some key Points in preparation - 
1. Use full fat milk to get more chenna out of mik
2. If using vinegar then mix equal quantity of water and vinegar and mix in boiling milk
3. Should not mix water with lemon juice
4. Use muslin/cotton cloth to strain chenna
5. Wash with cold water on staining chenna
6. Sqeeze water fully from chenna with fold and
press method
7. Smooth the china with back of palm for 25-30 mins
8. This is necessary to avoid crack in chenna balls
9. Make sugar syrup with 1 cup sugar & 1 L water
10. once syrup start boiling drop chenna balls gently
11. remove whistle from cooker lid and put on it
12. Boil for 6-7 mins 
13. Open lid after 5 mins and rasgulla is ready
14. Transfer rasgulla in serving bowl
15. chill in freeze and serve cold
