Stuffed Broccoli Paratha || Bharwa Masala Broccoli Paratha

Ingredients - 

1. Grated broccoli - 1 Cup
2. Chopped green chilli - 1 Piece
3. Grated ginger - 1 inch
4. Turmeric powder - 1/4th Tsp
5. Pepper powder - 1/8th tsp
6. Red chilli powder - 1/4th Tsp
7. Chaat Masala - 1/4th Tsp
8. Chopped coriander leaves - 1 Spoon
9. Wheat flour - 2 cups
10. Ajwain - 1/4th Tsp
11. Ghee - 4 Tbsp
12. Salt  - As per taste

Recipe - 

  1. Heat a pan on low flame, add 1/2 tsp ghee
  2. Add 1 chopped green chilli and 1 inch grated ginger and sautee for few seconds
  3. Add 1 cup grated broccoli and stir well
  4. Add salt as per taste and stir well
  5. Add 1/4th tsp turmeric powder, 1/8th tsp pepper powder, 1/4th tsp red chilli powder and saute for few seconds
  6. Simmer for 2 mins on low flame and stir well in between
  7. Again Simmer for 2 mins on low flame
  8. Add 1/4th tsp chaat masala and 1 spoon chopped coriander leaves and stir well
  9. Transfer in a bowl and cool down the stuffing
  10. Take a big thali and add 2 cups wheat flour
  11. Add 1/4th tsp ajwain, 1 tbsp ghee and salt as per taste
  12. Combine well for crumble flour
  13. Add water in batches and knead the flour in a soft dough
  14. Make a dough ball, dust the ball with flour
  15. Make bowl out of dough ball or roll in thick roti
  16. Add 2 spoons stuffing and seal the stuffed dough
  17. Dust the stuffed dough with flour
  18. Roll in thin paratha
  19. Heat tawa on med flame, put rolled paratha on hot tawa
  20. Turn to other side of paratha
  21. Add ghee and roast on both side into crispy paratha on med flame
  22. Paratha is ready to serve with chutney or curry
Key Points - 
1. To avoid moisture do not boil/blanch broccoli 
2. After cleaning broccoli with water pat dry wit kitchen towel
3. Spice level can be adjusted accordingly
4. This paratha prepared in ghee is very healthy
 and tasty to savour during all three meals
5. It is best paired with chutney or any curry
6. Instead of ghee can use sunflower/veg oil
