Drums of Heaven || Chicken Starter

Hello, I am sharing chicken starter recipe of Drums of Heaven. 
It’s very  yummy and interesting recipe. It’s very different recipe which is rarely found in restaurant as well.


Ingredients for first marination -

1. Chicken winglets - 10 Pieces (Cut loose meat from bone and push down to create a lollipop shape 

2. Pepper Powder - 1/4th Tsp

3. Ginger-garlic paste - 2 Tsp

4. Lemon juice - 1 Lemon
5. Salt - 1 Tsp

Ingredients for second marination -

1.Cornflour - 2 Tbsp

2. Maida - 3 Tbsp

3. Egg - 1 Piece

4. Kashmiri red chilli - 1.5 Tsp

5. Soy sauce - 1 Tsp


Ingredients for Gravy -

1. Chopped Garlic - 1 Tbsp

2. Onion chopped - 3 Tbsp
3. Chopped spring onion -1 Tbsp

4. Schezwan sauce - 3 Tbsp

5. Soy sauce - 1 Tbsp

6. Tomato ketchup - 2 Tbsp

7. Sugar - 1 Tbsp

8. CornFlour slurry - 3/4 Tbsp cornflour + 4 Tbsp water

9. Salt - As per taste



Recipe - 

  1. Take 8-10 chicken winglets in shape of lollipops in a big bowl
  2. Add 1 tsp salt
  3. Add 1/4th tsp pepper powder
  4. Add 2tsp ginger-garlic paste
  5. Add 1 lemon juice
  6. Coat well all the chicken pieces
  7. Leave it covered for 30 mins
  8. After 30 mins coat once again
  9. Now add 2 tbsp of maida
  10. Add 2 tbsp of cornflour
  11. Add 1 egg
  12. Add 1 tbsp of Kashmiri chilli powder
  13. Add 1 tsp of soy sauce
  14. And coat well all the pieces
  15. Leave to marinate for 2-8 hours
  16. Now Heat a pan on medium flame
  17. And add sunflower oil to fry all chicken lollipops pieces
  18. Drop while circling one piece in the oil and similarly drop 4-5 pieces in oil
  19. Deep fry lollipops on medium flame till they are crispy
  20. It will take 7-8 mins to fry
  21. Take out all fried pieces on absorbent paper
  22. Similarly fry all remaining chicken pieces and you can enjoy these fried lollipops as well with green chutney.
  23. Now heat another pan on medium flame
  24. Add 2 tbsp of sunflower oil
  25. Add 1 tbsp chopped garlic and 1 tbsp of grated ginger
  26. Saute for 10-15 seconds to remove raw smell
  27. Add 3 tbsp chopped onions
  28. Saute for 2-3 mins till it turns transparent or pink in colour
  29. Add 3 tbsp of schezwan sauce and mix well
  30. Add 2 tbsp of tomato ketchup and 1 tbsp of soy sauce
  31. Saute for 10-15 seconds
  32. Add 1tsp of vinegar and 1 tbsp of sugar and salt as per taste
  33. Saute for 10-15 seconds
  34. Prepare cornflour slurry with mixing 3/4 tbsp cornflour and 4 tbsp water
  35. Saute’ for 1-2 mins and add all fried chicken lollipop pieces
  36. And coat well gently with help of spatula
  37. Garnish with spring onions or coriander leaves
  38. Serve hot and enjoy with your loved ones

Lets see some key Points in preparation - 

  1. Take chicken winglet and cut loose meat from bone and push down to create a lollipop shape 
  2. Marinate lollipops in first marinate for  min 30 mins
  3. Marinate lollipops in second marination for min 3-4 hours
  4. Deep fry the lollipops in oils
  5. Make the masala and coat the lollipops and garnish with spring onions and serve it hot.
