Kheer





Yesternight whole Eden garden stadium was ceremonious with the slogan of 'Bharat Mata Ki Jay' after the tikkha and karara defeat of opponent Pakistani team and we got a mauka to celebrate our team India victory. 
In India we celebrate every occasion with something sweet like kheer. 

It is also known as Rice pudding, payasampayasagil-e-firdaus and firni


Kheer is prepared in festivals, temples, and all special occasions. The term kheer may derive from the Sanskrit word Ksheer which means "milk". Other terms like Payasampayasa or payesh are derived from the Sanskrit word Payasa or Payasam, which also means "milk". It is prepared using milkricegheesugar/jaggery, and khoya. It is often garnished using almonds, cashews, raisins and pistachios. There is one more popular version of North Indian kheer, prepared during festivals and havan in Varanasi by using only milk, rice, ghee, sugar, cardamom, dried fruit, and kesar (saffron milk). It is an essential dish in many Hindu feasts as a bhog or prasadam.

The dish is prepared during Ramadan and also for the feasts of Muslim weddings and festivals, such as Eid ul-Fitr and Eid ul-Adha. A similar dessert, known as firni, is eaten among the Muslim communities of India, Bangladesh, Pakistan, and Afghanistan. It is also served in most of the restaurants in India as desserts.

Let have look for recipe :
 Ingredients: 
Kheer Rice 100 gm
Milk 2 Ltrs
Sugar 1/2 cup
Cardamom powder 1/2 small tbs
Saffron few strands (optional)

For garnishing :
Pistachios chopped 1tbs
Almonds chopped 1tbs
Raisins chopped 1tbs
Cashews chopped 1 tbs

Recipe :
1. Take a heavy bottom pan, put milk and let it boil.
2. Wash the rice and mix it in milk.
3. Stir it consistently on medium flame.
4. Add half the quantity of dry fruits in it and also cardamom powder and saffron, cook it till it is done. Put off the flame.
5. Now add sugar and stir well. 
6. Let it cool for sometime and you can keep in refrigerator.
7. Serve in bowl and garnish it with remaining chopped dry fruits and serve it chilled.
