I am sharing a very heathy and chilled recipe of Bathua Raita
It is basically boiled chopped bathua leaves mixed with masala curd.
It is very healthy and refreshing Bathua raita is good accompaniment for every meal. Its a very good healthy recipe and also easy to prepare.
Ingredients - 1. Bathua leaves - 100 Gm 2. Fresh thick Curd - 1 Cup (It should be chilled) 3. Chaat Masala - 1 Tsp 4. Black salt - 1 Tsp 5. Hing/Asafoetida - 1 Tsp 6. Mustard oil - 1 Tsp 7. Whole Jeera - 1 Pinch 8. Salt - As per taste
Recipe -
  1. Take a sauce pan
  2. Add 1 cup water and boil
  3. Add cleaned and washed bathua leaves
  4. Cook for two mins
  5. Take out leaves in ice water (this is just to maintain lush green colour and stop overcooking of leaves)
  6. Post cooling down Squeeze out leave from ice water
  7. Chop the leaves very finely and keep aside
  8. Take a big bowl
  9. Add curd and whisk well for a smooth texture
  10. Add black salt, salt and chaat masala
  11. Add slitted green chilli
  12. Mix well
  13. Now add chopped bathua leaves and mix well
  14. Transfer in serving bowl
  15. Now heat a tadka pan on low flame
  16. Add 1 tsp mustard oil
  17. Add 1 pinch whole jeera and let it splutter for few seconds
  18. Now add hing/asafoetida and mix the tadka
  19. Switch off the flame
  20. Add red chilli powder and saute for few seconds
  21. Now garnish raita with this tadka and serve chilled
  22. Very healthy and refreshing Bathua raita is good accompaniment for every meal. Its a very good healthy recipe and also easy to prepare.
    
    Lets see some key Points in preparation -   
    1. Use fresh bathua leaves, do not use stems 2. Do not over cook leaves in boiling water 3. Use ice bath for dipping cooked leaves to maintain green colour and stop overcooking 4. use bathua water for kneading dough etc 4. Use fresh thick curd for good taste 5. Use common masala like chaat masala, black salt 6. Use green chilli in big pieces 7. Use hing in tadka to give it a nice taste
    8. Bathua raita is good accompaniment for any meal
