Hello, I am sharing yummy creamy recipe of Chicken Malai Tikka Its chicken starter recipe. It is tandoori style tikka recipe has sweet and creamy taste. It is enjoyed by small kids as well due to its non spicy flavour and creamy texture. Ingredients - 1. Boneless Chicken breast pieces - 250 Gm 2. Hung Curd - 1/2 Cup 3. Fresh Cream - 5 Tbsp 4. Processed cheese - 1 Cube 5. Ginger-garlic-chilli paste - 1 tsp 6. Chaat masala - 1 Tsp 7. Lemon juice - 1 Lemon 8. Pepper Powder - 1/2 Tsp 9.Roasted jeera powder- 1/4 Tsp 10. Kasuri methi/Dried fenugreek leaves- 1 Tsp 11. Corn flour - 3 Tbsp 12. Butter - 2 Tbsp 13. Sunflower oil - 2 Tbsp 14. Salt - As per taste Recipe - 1. Take cleaned tender boneless chicken pieces in a bowl 2. Add salt 3. Add 1/4th tsp pepper powder 4. Add 1/2 tsp ginger-garlic-chilli powder 5. Add half lemon juice 6. Coat well and keep it to marinate for 30 mins 7. Now take a big bowl 8. Add 1/2 cup hung curd 9. Add 4 tbsp fresh cream 10. Add 1 cube grated processed cheese 11. Add salt 12. Add 1/2 tsp chaat masala 13. Add 1/4th tsp roasted jeera powder 14. Add 1 tsp crushed Kasuri methi or dried fenugreek leaves 15. Add marinated chicken and coat well 16. Add 3 tbsp cornflour or as per marinade consistency 17. Add 1 tsp sunflower oil 18. And coat well 19. At this stage you can make the chicken 20. Marinate the chicken for 2 hrs to overnight 21. Coat the chicken well 22. Can add some cornflour if marinade is running or watery 23. 1st way to roast - Roasting on pan - i) Dip the bamboo skewer in water for 10 seconds ii) Put the chicken pieces on bamboo skewer iii) Heat a pan on low flame iv) put 1/2 tsp butter and 1/2 tsp oil in pan v) put chicken to roast vi) brush the pieces with butter and turn to other side vii) roast the pieces till it is golden brown, this will take 6-8 mins 24. 2nd way to roast - Direct Roast on stove flame i) put chicken in steel skewer ii) put the stove ON on low flame iii) hold chicken skewer on flame, and make sure flame should not touch flame iv)roast them turning on all sides v) brush with butter vi) put a charcoal piece on flame vii) and roast till it is cooked fully and it is golden brown on all sides, it will take 8-9 mins on low flame viii) switch OFF the flame and add butter/ghee on charcoal to generate smoke and smoke the chicken pieces to good tandoori effect 25. Take out chicken pieces in a bowl with help of fork 26. Add some chaat masala, butter and fresh cream and coat well 27. Serve with malai onions/any salad and chutney Lets see some key Points in preparation - 1. Use tender boneless chicken, usually breast pieces 2. Use hung curd and processed cheese 3. Can use almond paste instead of cheese 4. Use kasuri methi for good taste 5. Can roast either on pan, flame, oven or otg 6. Mix chaat masala, butter and cream before serving 7.
