Chawal Paratha with Matar Stuffing

Hello, I am sharing my fav recipe of chawal paratha with matar stuffing.  This one I have learnt from my mom and it is winter special recipe and so I am here with its recipe.

Ingredients for dough- 
  1. Rice flour - 2 Cups
  2. Water - 2 Cups
  3. Jeera powder - 1 Tsp
  4. Ghee/sunflower oil - 1 Tbsp
  5. Salt - As per taste
  6. Ghee/oil - 5-6 Tsp for roasting paratha
Ingredients for stuffing - 
  1. Peas - 1 Cup
  2. Mustard oil - 1 Tsp
  3. Chopped green chilli - 1 Piece
  4. Grated ginger - 1/2 Inch
  5. Roasted red chilli powder - 1/2 Tsp
  6. Roasted jeera powder - 1 Tsp
  7. Garam masala - 1 Pinch
  8. Chaat masala - 1/2 Tsp
  9. Pepper - 1/2 Tsp
  10. Hing - 1 Pinch
  11. Salt - As per taste
Recipe -

Dough preparation -
  1. Heat a heavy bottom kadhai on low flame
  2. Add 2 cups water
  3. Add 1/2 tsp salt
  4. Add 1/2 tsp jeera powder (optional)
  5. Boil this water
  6. Add 2 cups rice flour in batches
  7. Stir well
  8. keep the flame on low always
  9. Cover the kadhai and cook for 2 mins
  10. Stir well
  11. Switch off the flame
  12. Cover and keep aside
  13. Let it cook in its own heat
  14. Wait to cool down till lukewarm stage
  15. Now transfer the rice mixture in big bowl
  16. Add normal water in batches and knead the rice flour mixture into soft dough
  17. It will require 2 cups and 2 tbsp of water to knead soft dough
  18. After kneading cover it and let it rest for 5 mins
Stuffing preparation -
  1. Take a mixer jar
  2. Add 1 cup fresh cleaned and air dried matar into the jar
  3. Grind without water
  4. Transfer in bowl and keep it aside
  5. Heat a pan on Low flame
  6. Add 1 tbsp of mustard oil
  7. Add 1 chopped green chilli
  8. Add 1/2 inch grated ginger
  9. Saute for 1 min
  10. Add matar paste
  11. Saute for 1-2 mins
  12. Add 1 pinch hing/asaefotida
  13. Add salt as per taste
  14. add 1/ tsp roasted red chilli-Jeera powder
  15. Add 1/2 jeera powder
  16. Add 1 pinch pepper powder
  17. Add 1 pinch Garam Masala
  18. Saute till it starts moisture disappears and combining well
  19. Add chopped coriander leaves and mix well
  20. Transfer in bowl and cool it completely
How to stuff -
  1. Now take a ball size rice dough
  2. and make a round ball
  3. Flat it between palm
  4. Give a bowl shape
  5. Add 1/2 spoon of matar stuffing
  6. Enclose the stuffed dough ball and round it slowly
  7. Start floating the stuffed dough ball using palm
  8. Enclose all side if it is opening and stuffing is coming out
  9. Now flat it more using fingers (Refer video for details)
  10. Post that roll it slowly into thin paratha
Paratha Roasting - 
  1. Heat a tawa on low-med flame
  2. Remove extra flour from rolled paratha
  3. Put the paratha on tawa
  4. After one min flip it to other side
  5. After one minute add ghee/oil for roasting
  6. Put the flame on med-high flame
  7. And roast paratha into crispy outer on both side
  8. Likewise prepare all paratha
Serve it hot with green chutney and Ghughani
