Bihar Special- Litti

Hello, I am sharing recipe of Litti.
This is most popular dish of Bihar served along with Chokha.
Today not only Bihari’s but all loves Litti Chokha.
I have come up with recipe of  Litti now and have earlier shared Chokha recipe as well.
Let’s move to recipe now.

Ingredients - 
  1. Sattu/roasted black gram flour - 1 Cup
  2. Onion - 2 small sized
  3. Muli/radish - 1 medium sized
  4. Garlic - 4 cloves
  5. Ginger - 1 Inch
  6. Green chilli - 3 Piece
  7. Coriander leaves - Few sprigs
  8. Lemon - 1 Piece
  9. Homemade stuffed red chilli pickle - 1/2 piece
  10. Roasted red chilli powder - 1/4th Tsp
  11. Roasted jeera powder - 1/4th Tsp
  12. Chaat masala - 1/4th Tsp
  13. Hing - 1/2 Tsp
  14. Black jeera - 1/4th Tsp (optional)
  15. Ajwain - 1/4th Tsp
  16. Whole wheat flour - 2.5 Cups
  17. Mustard oil - 2 Tbsp
  18. Sunflower oil/ghee - 2 Tbsp
  19. Salt - As per taste
Recipe -
  1. For sattu masala -
  2. Take a chopper, add onion, green chilli, ginger and garlic and chop finely
  3. Transfer veggies in big bowl
  4. Add Muli and coriander leaves in chopper and chop finely
  5. Now transfer in the same big bowl
  6. Add homemade stuffed red chilli pickle or mango pickle (you can add lemon juice as well if pickle is not there)
  7. Add chaat masala, hing, half quantity of ajwain and black jeera, raw mustard oil, roasted red chilli powder, roasted jeera powder, hing and salt
  8. Mix all ingredients well
  9. If the mixture is not binding a bit then add little water and mix well
  10. Keep the sattu masala aside
  11. Now take 2.5 cups of wheat flour in big bowl
  12. Add remaining quantity of ajwain and black jeera, ghee, hing and salt
  13. And crumble well
  14. Now add water in batch and knead in semi soft dough
  15. Rest dough for 5 mins
  16. Now take a portion of dough and roll in a bowl shape
  17. Add sattu masala in the dough bowl
  18. and press and seal the stuffed dough bowl
  19. Remove extra dough from top after sealing the stuffed dough bowl
  20. Similarly prepare all Litties
  21. Now we have two ways to roast these Litti -
  22. 1st way of roasting
    1. Put 2-3 burner frames around the burner
    2. Place roti frame on top of burner frame
    3. Now arrange few Littis on top of frame
    4. Turn ON the burner on sim
    5. Roast Littis from all sides and this will take around 12-15 mins
    6. Once ready and transfer in bowl and dip in ghee

  23. 2nd way - Roasting in air fryer 
    1. Preheat air fryer at 180°C for 4 mins
    2. Arrange Littis in basket with a gap around all Littis
    3. Set 180°C for 6 mins and roast 
    4. Now again set 200°C for 4 mins (This setting of temperature will prepare Littis with soft from inside and crispy from outside)
    5. And roast from all sides
    6. If you want more crispy Littis and then set 180°C for 12-15 mins
    7. Once done transfer Littis in bowl and dip in ghee
Littis are ready to serve with Chokha, ghee and pickle.

Let’s see some key points in preparation - 

  1. Use grated or finely chopped veggies for preparing sattu masala
  2. Use wheat flour with bran for good Litti texture
  3. Use homemade pickle (optional) for better taste
  4. Instead of pickle use lemon juice
  5. You can roast on gas stove burner and air-fyer as shown
  6. You can roast in coal/dung cake fire, electric tandoor and oven as well
  7. After roasting dip in ghee and serve with Chokha, ghee and pickle
