Gujjiya || Karanji
In North India, traditionally Gujjiya is one of the offering to God in festivals like Hari Talika Teej, Jivit Putrika vrat, Vat Savitri vrat etc and also its is most popular sweet in Holi festival.
With name its sound little complicated and tough to prepare but its very easy peasy to make sweet crispy Gujjiya with beautifully moulded with flowery design.
The looks only can fascinate and you will get craving for the Gujjiya.
It has two version — 1. Dry one and 2. Coated with sugar syrup
Dry one is prepared with Rava-Mawa fillings and sugar coated one prepared with roasted Mawa with dry fruit fillings.
How to Prepare Gujjiya —
1. Roast half cup Rava in ghee on low flame for light brown colour and good fragrance.
2. Transfer the roasted rava in bowl and let it cool down.
3. Take 6 pedas in big thali and crush it nicely.
4. Mix Coconut powder in crushed peda.
5. Add roasted rava and a pinch of cardamom powder along with chopped dry fruits like cashews, almond and whole raisins.
6. Mix 4 Spoons of powered sugar and mix well.
7. Rava filling is ready, keep it aside.
8. Take two cups of maida and add 4 spoons of ghee and mix well for crumble flour.
9. Add water in batches and knead into semi hard dough.
10. Let the dough rest for 10 mins and then knead for another two mins.
11. Now make dough balls and roll it into puri like shape.
12. Grease the edges of puri with water.
13. Put 2 spoons of rava filling in centre and seal completely the puri in half moon shape.
14. Now twist the edges to give a flowery design. You can also use fork to give design on the edges. (With fork just need to press the sealed edges)
15. Heat oil in kadhai on medium flame. and fry the gujjiyas for light brown and crisp texture. Do the frying on medium flame only.
16. Gujjiya’s are ready for offerings.
