Juicy mixed fruit & Beetroot-carrot salad



I am back with yet another super tangy and crunchy salad. Little innovation I have added which worked very well. It was super hit with my office colleague who has shared this at the lunch table.
It was really finger licking salad.

I have used seasonal fruit to give it a nice twist of tanginess and sweetness.

Ingredients:

1. Strawberry - 1 cup
2. Green grapes - 1 cup
3. Apple - 2 (Can use any type of available like green also)
Pomegranatenate pearls - 1/2 cup + few for garnishing
5. Beetroot - 2
6. Red Carrot - 1
7. Lemon - 1
8. Basil - 4-5 leaves
9. Coriander leaves - 2-3 tweaks
10. Mint - 4-5 leaves
11. Chaat Masala - 1 Spoon
12. Honey - 4 Spoon
13. Pepper powder - 1 TBS
14. Rock Salt - As per requirement

Recipe:

1. Peel apple, Beetroot and carrot.
2. Dice all the Fruits, Beetroot and carrot in cubes.
3. Take fresh water and boil it and then add beetroot (keeping few aside) and carrot. Let it cook for 5 Minutes as soon as it is half cooked, remove from flame and strain the water and keep it for cooling. Don't throw this water instead you can drink it.
4. Take half apple, 4 Strawberries and remaining beetroot cubes in the grinder and make a juice without adding any water.
5. Take a big bowl and add all the diced fruits and beetroot and carrot.
6. Now add the juice (Keep aside few spoons of juice for garnishing) and all dry masala and salt, lemon juice. honey and roughly torn leaves. And mix well.
7. Take a serving bowl and drip juice on the wall of the serving bowl. Now transfer the salad in the bowl and garnish it with pomegranate pearls and twigs of mint and basil.
