Sarson da saag





Longing for some winter delicacy to enjoy then you should give a try to classic Punjabi Sarson da Saag. Sarson da saag te Makki da roti with jaggery and homemade butter, I am sure everyone drools with this combination in this winter.

This is an authentic Punjabi dish made of Sarson saag, Bathua saag, palak, methi, and dill saag (Sowa saag) and also muli leaves with roasted maize flour and spices with a hint of garlic and ginger along with hot green chilli. The small addition of these masala brings awesomeness in the taste.

I have added benefits of green leaves used here after recipe section. Let's move to recipe now:

Ingredients:

1. Sarson - cleaned and chopped - 2 cups
2. Palak - 1 Cup
3. Bathua - 1 cup
4. Methi - 1/2 Cup
5. Dill leaves - 1/4 cup
6. Mooli leaves - 1 cup
7. Chopped Onion - 1 Cup
8. Grated ginger - 2 Spoon
9. Chopped Garlic - 2 Spoon
10. Chopped tomato - 1/2 Cup - optional
11. Chopped Green chilli - 2 whole
12. Roasted Maize Flour - 3 Spoon
13. Cumin seeds - 1 Spoon
14. Red chilli - 2 whole
15. Black Pepper - 1 TBS
16. Garam Masala - 1 TBS
17. Mustard oil - 1/2 Cup
18. Ghee/Butter - 2 Spoon
19. Salt - As per taste

Recipe: 

1. Heat a pressure cooker and add all chopped green leaves in a pressure cooker and salt and one spoon ginger and half cup water and pressure cook it for five whistles on low flame.
2. After it cools, open the pressure cooker and with wooden Mathani (Churning stick) try to mix it well tin till turns like a paste.
3. Heat one wok and add mustard oil and let it heat sufficiently. Then add cumin seeds and red chilli and let it splutter for a while.
4. Now add chopped onion, green chilli, remaining ginger and garlic and roast them until they turn golden in colour. And then add chopped tomatoes (if you are adding).
5. Now add cooked saag mixture in it and roast it till the all water dries and it starts leaving oil.
6. Now add all pepper powder and garam masala and mix till well and fry it for another two minutes.
7. Its ready to serve now, before serving you can add ghee or butter as a taste enhancer and to give it a desi twist. Serve it with Makki te roti and onion chunks and a dollop of butter and a piece of jaggery along with pickle.
